Undo in Excel: Ctrl+Z (Mac: Cmd+Z)
What it does and when to use it
Ctrl+Z undoes the last action, and keeps undoing with each press, up to 100 steps. Ctrl+Y redoes. It is the shortcut that makes every other one safe to try.

Undoing past the point you wanted and not noticing. Watch the sheet, or press Ctrl+Y to step forward again.
